2 eggs
3 ½ tsp. of active dry yeast
5 ⅜ cups of Artisan Bakers Craft Flour (Any bread flour or AP flour can work)

Welcome to another tasty edition of Chefs Share! Each month, we share restaurant recipes from some of your favorite local chefs. These recipes don’t require professional kitchen experience, and ingredients can be found at your local supermarket or specialty store.
This month’s chef is Carey Hynes of Jaguar Sun in Downtown Miami. Hynes has over a decade of experience in some of the world's top kitchens. After deciding that a career in management consulting was not for him, Hynes worked in the kitchens of Astrance with Pascal Barbot and Spring with Daniel Rose.
In 2018, Hynes moved to Miami to open Jaguar Sun, an intimate 30-seat tropical cocktail bar and restaurant in the lobby of a downtown apartment building. Working with a limited kitchen, Jaguar Sun serves a tight menu of craft cocktails and creative pastas, which has garnered local and national attention for its ambitious bar food and drinks.
One of the most popular bites at Jaguar Sun are the Parker house rolls, an ideal starter for every meal at this neighborhood hot spot. We won’t waste any time describing them – they speak for themselves.
Before you get started, make sure you read the entire recipe to avoid any surprises. Also, keep in mind that you’ll be making a lot of rolls, so save this recipe for larger parties or for meal prep. Enjoy!
INSTRUCTIONS
- Heat the milk, butter, and brown sugar on the stove until it reaches 109 degrees, and whisk to ensure butter is fully melted.
- Add yeast and eggs, then whisk.
- Add it to a stand mixer along with flour and salt, mix with dough hook on second speed for 15 minutes. The dough should be a smooth ball at this point.
- Shape the dough into a large ball and let rest for 25 minutes.
- Shape into 2-ounce balls and place in a honeycomb pattern in a baking tin that can hold the rolls.
- Let the rolls rise at room temperature until doubled in size, then brush with egg wash and season with salt and poppy seeds. It should be about an hour.
- Bake at 375 degrees for 16 minutes or until golden brown.
- Remove from the oven and serve with honey butter.
